Yummy recipe- Crock pot Corned Beef

So I'm late for St. Patty's day...But, if you are like me and stocked up on corned beef when they were cheap this last week, you've got a couple socked away in the back of the freezer!

Corned Beef in the Crock Pot

  • 1 2-3 lb Corned beef, rinsed (throw away the package of spices)

  • 1 jar of stone ground mustard

  • 1/2 cup brown sugar

  1. Place corned beef in crock pot

  2. In a small bowl, mix together remaining ingredients

  3. Pour mixture over corned beef

  4. Cook on low for 8-10 hours.

Serve with Boiled little red potatoes, boiled green cabbage and corn on the cob!  Cooking it in a crockpot makes a great au jus- it's good on the meat or poured over potatoes. Makes about 4-6 servings.

It's also great on bread as a sammich!

Sales Cycles

The Cycle of Business- When items are on sale.

Sales are cyclical- certain items are on sale during specific times of the year, either due to holidays or special events. For example- Barbeque sauce is on sale in the summer, when people barbeque a lot. Manufacturers and stores will put out coupons and places items on sale to entice shoppers to spend more. These ingredients can be used in everyday foods, not just once a year. Stock up when they are cheap (OR free!) and you will eat well all year.

Coupon Previews- You can see the Future!

There are several websites that preview the weekly coupon inserts. However, there are regional differences due to product availability. There also may be slight differences in the value of each coupon. Most coupons received on the West Coast have a higher value, .50 or more each due to the increased cost of food.

http://www.taylortownpreview.com/

www.sundaycouponpreview.com/

Not all media outlets carry all of available the coupon inserts. In San Diego, We receive Smart Source (weekly), Proctor and Gamble AKA The P&G Saver (about once a month), General Mills Puts out a smaller insert with their brand specific coupons in it about once a month. The rest of the time their coupons will appear in the Smart Source circular.

Red Plum Coupons does not come in the newspaper in San Diego. It is delivered with the bulk mail on Mondays. Visit http://www.redplum.com/ and type in your address to see which local newspaper delivers the Red Plum Insert. In Southern California, it’s the LA Times.

Once you visit the coupon preview websites, you can visit Hotcouponworld or Afullcup and check out the forums dedicated to the drugstore or supermarket. Those sites have forums dedicated to future weeks sales. Employees have access to future sale flyers, usually only 2-3 weeks worth, and many of the employees of various stores are members of these sites and they scan them and post the scanned images (referred to as ad scans).

Members of the community will post “match-ups”, matching the items in the sale circulars with coupons that have already been published, or with coupons that will be published (with information from Taylor town or Sunday Coupon Preview).

You can plot your trip out in advance. Then when the ad goes “live”, Weds. morning for grocery stores and Sunday morning for drugstores, you can take your list, your fistful of coupons and shop until you drop.

Meal Plan Monday!

I got an email last week asking me if I could break down what is in the stuff I cook.  The reader accused us of not eating "enough" fruits and veg.

I also received an email from someone asking why we don't eat a lot of pasta, bread, or rice.  Answer: We get most of our carbohydrates from fruits and vegetables.  We eat quinoa, which is a grain.  It's high in protein, and is a great substitute for rice in soups and stews.

Monday:

  • B:Mr. Pillsbury breakfast sandwish (there was a rebate available!).  Mrs. Slim Fast Shake and coffee with creamer

  • L: Me, Slim Fast Shake, DH leftovers

  • D: Chili (my chili has beans, beef, peppers, onions, tomatoes, and quinoa)

Tuesday:

Weds:

  • B:Mr. Steel Cuts Oats and coffee with creamer.  Mrs. Slim Fast Shake and coffee with creamer

  • L: Me, Slim Fast Shake, DH leftovers

  • D: Chicken and whole wheat stuffing casserole and broccoli (my stuffing has dried cranberries, onions, celery, carrots and apples in it)

Thursday:

  • B:Mr. Steel Cuts Oats and coffee with creamer.  Mrs. Slim Fast Shake and coffee with creamer

  • L: Me, Slim Fast Shake, DH leftovers

  • L: Me, Slim Fast Shake, DH leftovers

  • D: Leftovers (which usually involves a green salad and steamed veggies or cut up fruit.

Sunday:

  • D: Eat out (I'm hoping for Souplantation!)

All of Mr. CouponDiva’s lunches include a piece of fruit, cut up veggies, bottle of water, granola bar and dessert.

I am making chili in the crock pot today- I am making a double batch and when it's done, I'll package up half of it for dinner next week.  I also cooked the ground beef for the taco salad.

Ralph's Private Selection Campaign (BzzAgent Review)

Recently I was selected to be a part of the Kroger's Private SelectionBzzAgent Campaign.  Around these parts, the Kroger brand store is Ralph's.

I was supplied with three product coupons: A Frozen Appetizer, A Frozen Pizza, and a Frozen Dessert (not Ice Cream)

The three product coupons arrived just in time for my husbands birthday party! I selected the Southwestern Style Chicken Trumpets, Margherita pizza and Cream Puffs.

Margherita Pizza

Southwestern Trumpets

Cream Puffs and Magic Shell!

  • The Southwestern Style Chicken Trumpets didn't last 5 minutes.  The boys at the party scooped them up and dipped them in sour cream mixed with salsa. They were flaky and loaded with chicken, peppers and cheese!

  • I added pepperonis to the top of the Margherita pizza (Boys love meat on their pizzas).  It was crispy, but the sliced little tomatoes made it a little soggy in the middle, but a few extra minutes in the oven and it was very crispy.  THe boys commented on the yummy balls of cheese on the pizza and how  it was a great appetizer!

  • The Cream Puffs were so good we didn't get a chance to thaw them!  I dipped them in magic shell and it made them even more decadent!

Making do....

It's the end of the month, and at our house that means there's weird stuff left in the fridge.  This morning for breakfast, instead of my usual zone bar and coffee, I wanted something a little more substantial.

I scavenged and found the ingredients for a breakfast pastie.

  • 1 pie crust

  • 2 eggs

  • 1/2 c. salsa

  • 1/4 c. bacon bits (the real stuff!!)

  • 1/4 c. cheese

  1. I scrambled and cooked the eggs with salsa and bacon bits poured it into the pie crust.

  2. I topped the hot, cooked egg mixture with cheese.

  3. Then I folded the crust in half and crimped the edges shut with a fork.

  4. Baked it at 350 for 20 minutes on an ungreased cookie sheet, until the pie crust was cooked.

I doctored up my coffee with frothed fat free milk that I had melted two Tablespoons of chocolate chips in and topped it with a few marshmallows.

It was really good, and I used stuff in the cupboard and fridge, so we are staying within budget for the month.

Speaking of budgets, Mr. CouponDiva and I are going to not eat out next month.  We're taking it one week at a time, but to combat the cost of eating out, we'll be relying more heavily days where I can cook a few extra meals, so we will always have good, fresh food at our fingertips.  We've also planned a couple dinner parties/get togethers at our house with friends in addition to Thanksgiving Dinner with my parents.  I'll be using my Outback free steak coupon tomorrow night!  Little Man and I are having a date!

Week 1: almost complete

Tomorrow marks the end of week 1 of the All you grocery challenge.

Our OOP (That's Out of Pocket) cost for Week 1:

99 Cents Only on 6/24/10 $17.65 (I bought 2 dozen eggs, 3 bunches of Asparagus, Whole Wheat Tortillas, 2 bags of salad, 2 packages of chopped onion, hazelnut Coffee creamer, 2 boxes of fiber 1 bars, bottle of vitamin water, and a large ham steak)

Pat & Oscar's on 6/26/10 (lunch with friends) our portion of the bill came to $17.95

Total: $35.60

We ate at home every night except Friday, when we went to a friends house for dinner (taco night).  I brought 3 bags of salad to contribute to the potluck.

We brought our lunches from home, except for the few days when he had business lunches (He was at a seminar one day and had lunch with a mentor another- so no OOP for us), and we had a vendor bring my office snackies, which I made into my lunch on Friday (a wholewheat bagel and fruit- NOM!), and Thursday, the Chik-fil-a near my office opened and I had a coupon for a free chicken sandwich- so my lunch was free! WOO HOO!

Breakfast each day was pretty much the same each day for us: iced coffee or vitamin water, a piece of fruit, and a protein bar.

Our kitchen is still well stocked.  Tomorrow for breakfast we are going to have:

Egg whites scrambled with carmelized onions, ham steak, Greek Yogurt with fruit, OJ and coffee.

Right now, I'm making FiberOne Blueberry Muffin mix with banana instead of applesauce (I do the low fat variant).  I am making it it into bread instead, I think it turns out better.

Food waste- a big money waster!

Last week, when I was getting my monthly pedicure (my one splurge!), I was reading an article that stated the average American family of four throws away $25.00 in food a WEEK!

Wasted food equals wasted money.

Here are a few ways you can curtail food waste.

Eat your leftovers:  this seems like a no brainer. When you divvy out your portions for dinner, make yourself your lunch for the next day.  If you won't eat it right away, pop it into the freezer- label it, so you don't forget what it is.

When it looks like your fruit is about to go south, freeze it
. This includes bananas!  You can use defrosted bananas in banana bread or frozen bananas are great in smoothies.  Other frozen fruit can also be used in smoothies.
Citrus fruits can be juiced and frozen or the juice can be consumed for breakfast or put in smoothies.   I just juiced a dozen oranges tonight!  Apples can be peeled cooked into applesauce or made into apple butter.

When I buy fresh tomatoes and they get just a little too ripe- I freeze them whole, then I bake them with chicken breasts and herbs and top with fresh parm- Yummy!

Buy less. I know it seems like a strange concept, especially with all of the really great deals you will be finding, but, the one proven way to waste less is to bring less home to waste.
