Using fruit and veggies as ingredients

The other day I wrote about avoiding food waste and I forgot to mention using fruit in quick breads.

Everyone knows about Banana bread.  I've been making this Banana Bread Recipe with Bisquick.  I've been adding 1/3 cup of flax meal (ground up flax seeds) and 2 Tablespoons of Cinnamon to give it a little umph. It's quick and easy.  You can always freeze the loaves of bread once they have cooled and save them for when company comes.

If you leftover applesauce, you can add it to bread or pancakes in lieu of using oil.

 

If you are a gluten free household, you can use gluten free Bisquick.
