Recipe: Easy Scalloped potatoes with ham

This is a super easy, yummy fast dinner.  I make this every 2 or 3 weeks and it's one of our favorites (and the leftovers are really great too!!)

Ingredients:

  • 1 (4.9 oz.) package Hungry Jack® Sour Cream & Chives Potatoes

  • 2 cups water

  • 2/3 cup milk

  • 1 Tablespoon Butter

  • 1 large sweet onion, chopped

  • 2 cups cubed cooked ham

  • 1 1/2 cups shredded cheddar cheese


Directions

  1. Saute Onion in butter.

  2. Combine potatoes, sauce mix, water and milk in 3-quart saucepan. Heat just to boiling, stirring occasionally. Reduce heat and cover. Simmer 10 minutes, stirring occasionally.

  3. Stir in ham, and any frozen veggies you wish.

  4. Mix 1 Cup cheese into potato/ham mixture.

  5. Pour into a greased casserole dish, top with remaining 1/2 cup cheese and bake at 350 degrees  for 20-25 minutes, until cheese on top is bubbly, brown and yummy!
